Hunger Brands: Operationalizing foodfillment - Teaching note

This real case focuses on kitchen operations at HUNGER, a Barcelona-based foodtech startup that scales virtual restaurant brands. The case examines the operational setup of BUNGR, its flagship burger brand, and challenges students to redesign workflows to handle peak-hour demand efficiently.

Students analyze preparation and baking processes using real timing data and video materials, apply operations management tools (process flow mapping, input–output analysis, and capacity planning), and propose improvements in staffing, layout, and workflow design.

Teaching objectives:

  • Introduce process analysis and bottleneck identification.

  • Quantify capacity and resource utilization under different demand scenarios.

  • Explore the impact of variability and batch size on throughput.

  • Discuss managerial levers to improve service operations.

Teaching format:
The case can be taught in one 90-minute session (process analysis focus) or two sessions (including variability and improvement levers). Videos illustrate key process steps, helping students visualize real operations.
